Ann and Mark Sievers own and operate Il Fiorello, a local, urban, organic farm. We are committed to producing the highest quality organic artisan olive oils. In Italian, "Il Fiorello" means "little flower." The name was inspired by the tiny, white flower blossoms on the olive trees, each of which matures into a delicious olive. Ann Sievers' family name is Fiorello, and she recognizes the strong dedication and respect for healthy food and farming practices that has been passed down through her family tradition.
Olive Oil Tasting
Taste their Extra Virgin Olive Oils, Co-Milled Oils, and Balsamic Vinegar Reductions side by side. You will learn how to appreciate olive oils and enjoy a chef-crafted food pairing to broaden your palate, guided by their experienced staff.
Olive Oil Tasting involves four basic steps:
Warm the Olive oil.
Smell the Olive oil.
Slurp the Olive oil.
Pair the Olive oil.
Warm the olive oil in your hands by swirling it around a little to trap the aromas. Smell the olive oil carefully to detect the oil's "nose" – aromas may include fresh-cut grass, fruits, tomatoes, nuts, cinnamon, and other herbs. Sip the olive oil and hold it in your mouth for a few seconds before sucking in some air through it to release more aromas and flavors. Bitterness will be felt on the tongue, which may be an acquired taste for some. Finally, swallow the oil, noting a pungency at the back of your throat that gives you a peppery sensation. Finally, after tasting an olive oil on its own, the final step is to pair it with food!

You'll get to try some of their most popular products, learn how to taste olive oil, and pair it with delicious foods. This kit contains everything you'll need to host your own olive oil tasting for up to six people.
Milling Services
Gruppo Pieralisi, the world's leading producer of olive milling equipment, manufactures a state-of-the-art continuous system mill for IL Fiorello. Their mill is the most modern and high-tech milling machine in North America, and it is one of only about 50 olive mills in the country. It is a closed continuous milling system with minimal oxygen contact and the preferred two-phase oil extraction process. To produce the purest oil, the two-phase system employs both a decanter and a separator.
Interesting facts about Olive Trees
Olives change color as they ripen, progressing from green to black.
It takes about 20-25 pounds of olives to make one quart of olive oil but this depends greatly on the variety of olive.
Olives grow on first year wood only.
Olive trees can grow as old as 2,000 years

The Olive trees are topped to make hand harvesting easier.
Harvest typically occurs from October through December.

Kitchen on the Grove
Fiorello's Kitchen in the Grove hosts a variety of culinary classes.
Demonstrations and hands-on work are both included in the classes. You'll enjoy watching techniques and creating your own works of art. You eat together, laugh together, and enjoy food and wine pairings together at IL Fiorello
